Greystone Estate is a magnificent and luxurious self-contained property.  Set on 10 acres down an olive tree lined driveway and located centrally on the iconic tourist trail of Hermitage Road in the heart of the Hunter Valley and within moments of award winning restaurants, wineries, breweries, cycleway and adventure experiences. Moments to award winning Muse Kitchen and 9km to The Hunter Valley Gardens, 10km to Bimbadgen and The Vintage Golf Club, and a 10 minute drive to Hope Estate, as well as concert pick up at the door.

Custom designed for large groups stays, Greystone Estate is an exceptional property accommodating up to 32 guests within 15 luxurious king suites and 15 bathrooms. The Estate is ideally suited to groups seeking a destination for their family and friends to holiday or celebrate, and is equally equipped to cater to corporate off-sites, creative workshops or for fitness groups on wellness retreats. Thoughtfully detailed, Greystone has all you would expect from the finest hotels, yet feels boutique with room for all.

With guests comfort and large group entertainment in mind, no detail has been left unturned at Greystone Estate. Guests can enjoy not only their luxurious air-conditioned suite with plush bedding but also the large open plan living, dining and entertaining and lounge areas including a stunning stone fireplace, TV’s, Wi-Fi, huge semi-commercial kitchen, sparkling pool, and bbq kitchen pavilion.  The barn-sized games room with pool table, ping pong and foosball as well as a bar with large screen TV’s ideal for sports fans or cinema nights.  Outside, enjoy the golf putting green, bocce court and more.

Sophisticated décor of striking grey, black and white features throughout the property with accents of leather, chrome, black and white, oak and stone, ensures every rooms exude glamour. You’ll feel dressed-up surrounded by these interiors yet, totally relaxed.

Greystone Estate feature 4 buildings; The Main House, Cottage 1 & 2 and the Gow House as well as the Games Room, BBQ Kitchen Pavilion and laundry all within view and meters of each other.

The Main House
Greystone Estates main house is the heart of this property, which has been custom, designed with room for all 32 guests to wine and dine, relax, work or be entertained. From the moment you walk through the grand entrance doors the style and detailing will impress you.

The Main House accommodates 14 guests in 7 stunning suites and 7 bathrooms (plus a powder room). Its sophisticated and large living and dining spaces are light filled and feature packed, providing a sense of relaxed luxury. Dining has gone to a new level at Greystone Estate with the ultimate dining table seating 32 guests for your long lunch, dinner, conference, board meeting or celebration will be like no other experience.

Catering for a crowd is signature to this property, and Greystone’s kitchen is spiced up to the highest spec, which provides guests and chefs with the ease of a semi-commercial kitchen with a luxury fit out. Voluminous double fridges, two dishwashers, dual sinks, two ovens and a commercial coffee machine, cater with ease to every occasion. Whether it’s a feast for family and friends or Greystone Estates private chefs catering to your occasion, you’ll want for nothing. There’s even a walk-in pantry for your butler!

The living room features sumptuous leather lounges and individual chairs so you’ll be hard pressed to decide which is your favourite spot; in front of the stunning stone fireplace to relax with family and friends, share a movie, or present to a group on the two wall-mounted large screen TV’s.

The dining and living room areas open out onto a deep terrace with outdoor lounges to enjoy the views across the property to the dam - perfect after a memorable dining experience to let the afternoon slip away with a fine glass of Hunter wine in hand while you relax under beautiful hanging festoon lighting.

Cottage One + Two
These are no ordinary cottages, with soaring cathedral ceilings and striking, jet black signature walls, all set against crisp white tongue-and-groove panelling, which add a sense of drama and instantly transports you into holiday mode. These two-level cottages accommodate 5 guests (2 king splits beds and 1 king single) with two beautiful bathrooms. Downstairs guests will enjoy a large living and dining area with large TV, kitchenette, bedroom and bathroom with shower. Upstairs can accommodate 3 guests in a large loft room with en-suite. Fully air-conditioned with luxury fittings makes these cottages “two” in a million.

Gow House 
Originally an iconic family residence in Merewether, this heritage house has journeyed to the Hunter Valley and now stands in pride of place as a jewel on the grounds of Greystone Estate.

This gracious historic house has been lovingly restored and revived to a new glory, whilst retaining its true character with high metal pressed ceilings, deep verandahs and wrought iron features. Accommodating 8 guests in 4 king (split) en-suite rooms, each with individual décor and hand selected pieces, makes staying a unique experience – you’ll be fighting over who sleeps here!

Pool Area
If poolside entertaining is your thing, then Greystones infinity pool with BBQ kitchen will have you designing your entire weekend around it. Near the entrance of the Estate, the pool and lounge area is perfect for those hot summer days entertaining, and lazy evenings with a cocktail in hand. Offering guests a fully kitted out entertainers kitchen, including all flatware, cutlery, crockery, fridge and food prep station – everything your group will need on hand. Entertaining is truly a breeze!


Outdoor Dining:

Positioned on the deck outside The Main House, this stunning outdoor dining area is perfect for all your long lunches or sunset dinners. Sit under weeping wisteria and relax to the calming sounds from the water feature on this 14x5m wide outdoor dining space.

The Games Room

The property’s games room is no ordinary shed. Custom designed with entertainment for all in mind, guests of all ages will enjoy a pool table, ping pong, foosball table, dart board, large TV screens, Foxtel, and a bar with tables and chairs. It's playful interior is entertainment ‘to the max’. Rustic corrugated iron and recycled timber features compliment giant barn doors that slide open on one side of the barn to take in the property views and pool beyond. It’s also the perfect place for a corporate tournament, team building games on indoor wellness and yoga workshops.

And if that’s not entertainment enough, then the Hermitage Road Cycleway at the properties entrance is the perfect excuse to explore the exciting destinations on Hermitage Road, including horse riding, Segways and more.


Greystone Estate is set on 10 park-like acres of beautifully manicured lawns and gardens, designed for visual appeal as well as fun.

By day guests can wander the grounds and enjoy the rose, olive and fruit tree grove or take a seat by the dam and enjoy the sunshine. For those with activities in mind, the putting green will keep your family, friends and colleagues entertained. And in the evening illuminated pathways allow guests to enjoy the evening ambiance as well as an easy strolls from The Main House to their accommodation whilst taking in the lit trees and bright stars at night.



Holidays aren’t about laundry, but when the need arises, Greystones’ laundry hut is perfect, with a 13kg super washer and tumble dryer available for your convenience.

A security deposit/bond of $3000 is required for your stay and is payable as a credit card pre-authorisation. This will be processed approximately 24 - 48 hours before your arrival, so please ensure the funds are available at this time.

CATERING and IN HOUSE CHEFS: All in-house chefs and caterers to Greystone Estate are exclusively provided and managed by our partners Hunter Concierge on-site.
